I remember my grandmother making bread pudding whenever we had stale bread. I would watch her tear the old bread into small pieces then add eggs, milk, and sugar; sometimes she would add raisins or pineapple chunks. She mixed the ingredients with her hands until everything was wet and mushy. Then she would transfer the mixture into a baking pan and pop it into the oven. The sweet aroma of baking bread would soon permeate the house and my cousins and I would eagerly be waiting for the fresh, hot bread pudding as it came out of the oven, just in time for merienda.
I was trying to clear out “forgotten” food from the refrigerator and found “old” bread as well as several pieces of “failed” banana muffins (my daughter did not get the proportions of flour and baking powder right). I hate to see food go to waste so I decided to make bread pudding. It tasted good!
