NO-BAKE CHEESECAKE



I was at the “Baking needs” aisle in the supermarket and I spotted a box that said “Real cheesecake dessert”. It was a Jell-o No Bake cheesecake! Always on the lookout for shortcuts (the box said “15 minute prep”!), I was eager to try this faster cheesecake recipe! Well, at least in terms of preparation anyway; you still have to wait during the chilling period.

The box had two packages, one for the crust and the other for the filling. Directions were so easy to follow! You just had to mix the crust mix with melted butter and sugar and press the crumb mixture onto the pie plate. For the filling, you simply had to mix in some milk and beat until the mixture thickens. Then spoon the filling onto the crust and (this is the hard part) refrigerate for an hour. Top with your favorite fruit topping.

Along the same aisle were several canned fruit toppings; my daughter chose strawberry. The topping tasted quite good; there were lots of whole strawberries in it. I just wasn’t too keen about the (too) red color.

This cheesecake was lighter than the previous one I made (see cheesecake). So I now have two ways by which I can have my cheesecake and eat it too.
