LANGKA CUPCAKE FOR MOM

Happy Mother's Day, Mom! Though you are VERY far away, your family wishes you happiness and love on your day! 

In honor of you and your brilliance in recipe innovation, your son and I decided to whip up something totally new - just like the invention test on Junior Masterchef Australia. :p This is called "Langka Cupcake for Mom." We hope you like it.

Ingredients:
1/2 cup melted butter
1 cup sugar (preferably brown)
2 eggs
4 tsp. baking soda
1 tsp. salt
3 cups flour
1 cup non-fat milk
4 cups pureed or chopped langka

Directions:
1. Preheat the oven to 350 F.
2. Cream the butter, sugar and eggs.
3. Mix in the baking soda and salt.
4. Alternately add the flour and milk.
5. Puree or chop up the langka. Fold this in the batter.
6. Line the cupcake pan.
7. Pour in the mixture to about 3/4 full per cup.  
8. Bake for 45 minutes.

*Makes 2 dozens.
